Regenerating Food Systems and Societies

The International Society for Gastronomic Sciences and Studies cordially invites scholars, practitioners, community members, and civic society to participate in its first Congress, “Shaping Gastronomy, Regenerating Food Systems, and Societies.”

The Congress will focus on fostering scholarly exchange of knowledge and reflections on the interconnectedness of gastronomy, food sustainability, ecological transition, and food justice. Its primary objective is to offer a comprehensive overview of recent research in sustainable gastronomic sciences and studies while delving into the complexities of transdisciplinarity within this field. Specifically, the Congress aims to examine the definition of gastronomy and its pivotal role in shaping our society and to explore the necessary transitions to address global challenges within food systems worldwide.

The Congress will address these issues by exploring topics such as the environment, mobility, perception, One Health, food sovereignty, local ecological knowledge, and food heritage. Through these discussions, participants will cross-inspire each other in the multifaceted role of gastronomy in addressing contemporary food-related challenges and in fostering sustainable practices. By providing a platform for dialogue and collaboration, the Congress will catalyze innovative solutions and promote positive change in the realm of sustainable gastronomy and food systems.

  • Local knowledge related to ecology and gastronomy lies at the heart of many small-scale food systems worldwide and plays a crucial role in creating context-based solutions to future challenges of food systems. Focusing on them is essential to provide sustainable scenarios for rural development, eco-tourism, and small-scale food suppliers and restaurants.

  • This thematic section focuses on the analysis of movements of people, goods, and ideas, believing it to be an essential step towards a deeper understanding of food systems, both historically and in contemporary times.

  • The political and economic governance of food systems is a crucial crossroad for better understanding how food and foodways are globally shaped and how to possibly articulate more just and sovereign food arenas.

  • Beginning with the recent inundation of mass media with images of food, this section aims to criticize frequent rhetoric like 'happy farming' or 'agro-apocalypses', as well as individualistic slogans such as “vote with your spoon”. The scope is to explore such debates offering insights from a diverse range of national and regional contexts.

  • A holistic approach to food choices and well-being integrates disciplines like nutrition, medical sciences, and psychology, as advocated by the World Health Organization's 'One Health' concept. In this section, we delve into the pivotal questions surrounding human and planet well-being through the lens of food perception. Exploring the intersections of nutrition, sustainability, and psychology, we seek innovative multi- and transdisciplinary methods to address these issues across various scales.

  • Gastronomy has proven to be a particularly fruitful territory for researchers who operate at the frontier between disciplines. This section focuses on how artists, designers, philosophers, and other creative professionals can deploy a participatory and collective approach to future challenges of food systems through gastronomy.

  • The urgency of the environmental crises poses the question of how to fix the failure of current food systems that, at all stages, carelessly pursue endless economic growth. Despite the many obstacles, is the ecological transition a good proposal to address this issue? Will the radical goals of revolutions help to achieve the change? Bearing in mind the holistic perspective of gastronomic sciences and studies, scholars across disciplines are invited to explore these challenges and opportunities, envisioning a transformative shift in food systems.

Registration Details

Registration will open soon. The registration fees are as follows:

ISGSS Members: 185 euros

Non-members: 250 euros *This fee includes registration to the society for one year.

15% off discount for early bird registration until July 15, 2024.

A preferential fee of 20 euros is available for:

  • Scholars, activists, community representatives, professionals and stakeholders in the field of food and gastronomy in the Global South (as defined by the United Nations Conference on Trade and Development, UNCTAD).

  • Students, undergraduates, postgraduate, and doctoral students at universities in the Global North and Global South.
